you could not of mucked it mate, when you say tart do you mean sour? or just really dry, cause it was alsways going to be dry with that yeast....if it is really sour, like you cant drink it sour then you have an infection and probably didnt clean your fermenter properly... give it time in the bottle...

that nudie juice is cloudy innit? would make a nice scrumpy cider. next time try and find a dry beer yeast called US-05 and let me know what you think of the diff btwn it and champagne yeast.
