HELP: Xmas present for my mum

I'm pretty short on ideas. I want something slightly extreme and out of her comfort zone. skydiving is a possibility but maybe a little too extreme. something very non-traditional.
any ideas?

balloon ride! not really extreme...but a bit different.

they do nice package things at the yarra valley with breakfast at a winery or sommat.

I thought about hot air balloons but they're about $300 so I'd like to find something a bit cheaper. maybe a glider flight.
