kopparberg pear is best, most other cider is too much like a beer substitute, but kopparberg is a totally different drink

I drank some awesome cider in London, in fact it was so good I can't even remember the name even though I drank it for nearly 2 months.

eh, can't stand magners and bulmers, waaaaaaay too sweet. all about coldstream and monteith's apple imo, as well as mercury dry.

So i put 20 litres of AJ in a fermenter last night, was lucky i found 16 litres of nudie juice for half price at coles ($3 per 2 litre)
Used a champagne yeast with nutrient so should be pretty dry, also added about 1 kg of sugar (~250gm was raw sugar, the rest refined)
Came in at the lower end of "white wine" on the hydrometer so i guess will be about 9% alcohol when its done.

whoa 9%! dont worry if its to dry, just back sweeten it in the glass with more apple juice when you drink it.

that nudie juice is cloudy innit? would make a nice scrumpy cider. next time try and find a dry beer yeast called US-05 and let me know what you think of the diff btwn it and champagne yeast.

Yeah was quite cloudy, im hoping for a flavour similar to Monteiths cider, but tbh I have no idea how to do it, just knew it was quite a dry cider so thats what i told the guy in the home brew store and he gave me the champagne yeast.

Im a bit worried about how sanitsed my fermenter was though cause i sanitised it, shook it around, a few time over about 5-7 minutes and then rinsed out, but i only used tap water to rinse it out, should i have used distelled water?

You should make a little mule cider and sell it at the cafe, Get a nice glass fermenter with a tap in the bottom and pour it straight out (could you do that?) would be awesome.

it's sugar that you are worried about. Beer really doesn't have that many (about the same if not less than skim milk). Dunno about cider tbh

edit - alcohol has a LOT of calories. not only that, but cos your body has to process it, it gets harder to process all the other crap you are eating too...BAD. my PT said that the only thing im doing bad atm is drinking. she wanted me to quit for two weeks and i said - sure, after summer. :lol:

Those suguar drops will just carbonate the cider (mak it bubbly) nothing more nothing less.

your fermenter will be fine, tap water is fine for ccleaning.

So i bottled the cider on Wednesday night, was still very cloudy (used cloudy juice so i guess thats why!)
had a taste and it was quite tart, think i fucked it up, but oh well, i'll try some beer yeast next time and get clear juice from an orchard near my dads house up in Bright.

you could not of mucked it mate, when you say tart do you mean sour? or just really dry, cause it was alsways going to be dry with that yeast....if it is really sour, like you cant drink it sour then you have an infection and probably didnt clean your fermenter properly...

give it time in the bottle it might come good, also remember if its just "dry" go buy some more apple jiuce and back sweeten it in the glass with your cider.

Yeah it was quite 'bitey' at the back of the palette so yeah sour/tart.
So yeah sounds like it wasn't cleaned well enough, i had a feeling it wasn't, it's so big it was hard to clean.
Shiiiite so what can i do to improve it if anything? how long will it need to stay in the bottle for?
Apart from the slightly sour taste, is it ok to drink?

I'm puting down a cider after Xmas. Using Wyeast cider yeast. This is a liquid yeast culture. See if your local homebrew shop has them. If not, they could probably order one in for you. Grain and Grape ordered mine in for me. Generally your cider will be on the dry side without any sweeteners, especially if you use a champagne yeast. To sweeten the brew you need to use an unfermentable sweetener. I'm using lactose. 250-350 grams should be enough to make a medium sweetness cider(Monteiths,Bulmer,Magners) Add more if you want a sweet cider.

^^^ not necissarly true about sweetness and lactose imo, sure you can use an unfermentable like lactose but you can also use a beer yeast (us05 or s04) and it should finish at a higher gravity around 1.010 - 1.012 and leave you with a sweeter cider without unfermentables. ive stressed it enough to Al to start using a hydrometer though, cider is a bad thing to have bottle bombs of.

al, leave it two weeks in the bottle, chill it down and have another taste.
