ARGH!! Miss it

Fuck, I'm totally going to come home and not want to leave. Melbs just needs a proper cocktail bar and I will be powerless to resist.

There are cocktail bars for sure, but I reckon their drinks, service (and prices!) leave a lot to be desired. I dunno, maybe I am now unaccustomed to Aussie blokes strutting around like king shit?

I dunno. I've spent *cough*quite a lot of*cough* time drinking rad drinks made by people who really see it as an artform. I like to sit at the bar and talk about my drink! I tried being an interested and attentive punter in Melbs last time I was there and it were shit :(. 1806, you fail.

It's a shame Ginger closed. The info I get from afar is through that family.

(Actually, I have been told that Der Raum is good. Need to try. Am now used to $12 drinks, though.)

Der Raum is really nice, they totally nailed the decor and the bartenders are super friendly. Drinks can be a little too "oh wow look what I can do though".

Not that you have to order them.

This is a big factor. I got really put off at 1806 by the blokey strutting/sleaze. It's the service equivalent of a fulleh sikk subwoofer :?

Disclaimer: This whinge is 100% based in being totally spoilt. If anyone's heading to NYC, you gots ta check out the cocktail scene. ZOMG. They've got most of the best people in the world, but since there's a whole community of them, the egos stay in check and they keep pushing each other to be better.

And the drinks cost $12.

One time I went to that bar with some friends and after a while it started to smell really bad. Then eventually we mentioned it to the bar staff and they said "oh yeah, that's because the sewage pipe runs under where you are sitting and it doesn't seem to be sealed too well".

And so it was.

Have Gravlax curing in my fridge at the moment. Salmon in a mix of sea salt, sugar, peppercorns, fennel & caraway seeds and sprigs of dill. Will cure for three days, and update when its done.

Was talking about curing some bacon but I need a smoker for that. Add to the list of kitchen utensils I do not own.

nice one mecka. On the weekend me and a mate cured two 2KG pork loins and a massive piece of lamb. rolled and left in rock salt for 2 days, then rolled in pepper and chilli and wrapped in muslim cloth and left hanging for 1 month. Going to be insane!

If you need good advice for curing get a book called preserving the italian way its got everything in it you would ever want to preserve/cure, bacon, proscuitto and we even did duck last weekend!
